Tender oven-roasted salmon with a savory, slightly spicy Korean-inspired glaze, finished with a brief blast of high heat for a glossy surface. A refreshing sesame-citrus salad adds crunch and acidity. Our Kitchen Co-op approach coordinates the salmon, salad and plating so both home cooks can enjoy dinner together.

Mise en Place
Preheat the oven to 200°C top/bottom heat. Line a small baking tray with baking paper. Pat the salmon dry and place skin-side down if using skin-on fillets.
Combine gochujang, garlic, ginger, soy sauce, honey and sesame oil. Stir until smooth. The glaze should be brushable, not excessively thick.
Spread a thin, even coating over the exposed salmon flesh. Reserve no glaze that has touched raw fish for use after cooking.
Wash and thoroughly dry the arugula. Slice the cucumber thinly and cut the red onion into fine slivers. Combine in a bowl.
In a separate bowl, whisk lemon juice, soy sauce and sesame oil. Keep the dressing separate until the salmon is nearly ready.
Ready to Cook?
Start the coordinated timer when the salmon enters the oven.
Coordinated Cooking Timer

Ready to cook.
The timing is approximate. Thicker fillets may need longer; thinner fillets may finish sooner. The optional grill stage should only be used if the salmon needs additional surface colour. The timer cannot determine food temperature or automatically control the oven.
Let's Cook Together
Place the glazed salmon on the lined tray in the preheated 200°C oven. Roast for approximately 12–14 minutes, depending on thickness.
Check the thickest part with an instant-read thermometer. For fully cooked fish, use 63°C internally as the target.
While the salmon roasts, arrange the arugula, cucumber and red onion on two plates. Keep the vegetables loosely arranged for height and texture.
Leave enough negative space for the salmon fillet.
If the salmon needs a glossier, more caramelized surface, switch the oven to grill/broil and move the tray to an appropriate upper position. Remove the baking paper before grilling; use a tray suitable for direct grill heat.
Grill for approximately 1–2 minutes, watching continuously because the honey and gochujang can burn.
Skip this step if the fish is already cooked through or sufficiently caramelized. Turn the oven OFF.
Whisk the dressing once more. Dress the salad once at plating step 3 below.
Keep the sesame seeds ready for the same finishing step.
Place one salmon fillet on each plate alongside the salad. If the fillets differ in weight, use the larger fillet for the larger serving.
Keep the glazed salmon surface visible. Serve immediately.
Michelin-Inspired Plating
Use one matte neutral or dark plate per diner. Three thumbnail spaces are ready for the matching plating images.
Pending
Picture 12 o’clock as the far edge of the plate. Arrange a loose, compact nest of arugula around 9–10 o’clock. Tuck in cucumber slices and fine red-onion strands. Leave room for the salmon and keep the dressing separate.
Pending
After confirming the salmon is cooked, place one fillet beside the salad toward 4–6 o’clock, with its best caramelized surface facing up. Balance the overall arrangement around the plate center and keep the rim clear.
Pending
Spoon a restrained amount of the prepared dressing over the salad once, keeping it off the salmon’s glazed surface. Scatter the recipe’s sesame seeds, wipe the plate rim and serve immediately.
