Ingredients

Marinade

  • 2 tbsp olive oil
  • ½ large lemon, juiced
  • ½ tsp salt
  • ½ tsp coarse ground black pepper
  • Pinch paprika
  • Pinch chili flakes
  • 4 cloves garlic, diced
  • ½ cup parsley, finely chopped

Skewers

  • 20 jumbo shrimp (~500 g), thawed
  • Wood skewers (soaked 30 min)
  • Lemon wedges (for serving)

Steps

  1. Mix marinade – In a bowl, whisk together olive oil, lemon juice, salt, pepper, paprika, chili flakes, garlic, and parsley.
  2. Coat shrimp – Toss shrimp with 80% of the marinade. Cover and refrigerate for 30 minutes. Reserve 20% for brushing.
  3. Brush lightly – Remove shrimp from fridge and brush with the reserved marinade.
  4. Thread skewers – Arrange 3–4 shrimp per skewer, leaving space between each piece.
  5. Grill evenly – Cook over medium-high heat (375–400°F / 190–200°C) for about 2–3 minutes per side, until pink and firm (internal temp 145°F / 63°C).
  6. Serve hot – Place skewers on a platter, garnish with parsley, and serve with lemon wedges.
