Homemade chocolate chip pancakes during the Christmas season

Ingredients

  • 1.5 cups Meijer Buttermilk Pancake Mix
  • 1 cup cold water
  • 1 tsp brown sugar
  • 1 tbsp baking sugar
  • Β½ tsp vanilla extract
  • Β½ tsp baking soda
  • Β½ cup Ghirardelli chocolate chips
  • Non-stick spray
  • Small pancake pan(s)
  • Bananas (optional)

Steps

  1. Prep pan – Spray inside & sides with non-stick spray.
  2. Heat – Induction hob to 6/10.
  3. Make batter – Mix pancake mix, water, brown sugar, baking sugar, vanilla, and baking soda until smooth.
  4. Pour batter – ΒΌ cup in center of pan, let spread. Sprinkle chocolate chips evenly.
  5. Check bottom – After 2–3 min, slide spatula under pancake. If it moves, it’s ready to flip.
  6. Flip – Cook other side 30–40 sec (faster than first side).
  7. Serve – Remove with spatula. Add bananas if using. Enjoy!

Notes & Tips

  • Cook on slightly lower heat for even browning.
  • Fresh bananas and crispy bacon pair perfectly.
