Ingredients
Yogurt Base
- 1.5 cups plain Greek yogurt
- 2 small garlic cloves, finely diced
- Β½ tbsp chives, finely chopped
- ΒΌ cup parsley, finely chopped
- ΒΌ cup dill, finely chopped
- Pinch dried mint (optional)
- 1 tsp honey (or yuzu honey for a twist)
- Β½ tsp fine sea salt
- Β½ tsp black pepper
Eggs
- 5 eggs, poached
Butter Sauce
- 4 tbsp butter
- 1 tbsp sesame seeds
- 1 tsp paprika
- 1 tsp sweet pepper flakes
- Pinch red pepper flakes
Steps
- Prepare yogurt base β Mix Greek yogurt with garlic, parsley, dill, chives, mint, honey, salt, and pepper until creamy. Spread evenly on serving plates.
- Poach eggs β Crack eggs into ramekins and gently slide into simmering water. Cook 4β5 minutes until whites set but yolks remain runny.
- Toast sesame & melt butter β In a small pan, toast sesame seeds until golden. Add butter and melt over medium heat.
- Infuse spices β Stir paprika, sweet pepper flakes, and red pepper flakes into the butter. Cook until foamy, then remove from heat.
- Assemble β Place poached eggs on top of the yogurt base. Drizzle generously with the spiced butter sauce.
- Finish & serve β Garnish with extra parsley and a sprinkle of salt flakes. Serve warm with toasted bread.

- Spread yogurt base in a wide circle on each plate.
- Place eggs gently in the center.
