Ingredients

Chicken

  • 600 g chicken breast, diced into 28 cubes

Marinade

  • 4 cloves garlic, diced
  • 3 tbsp parsley, chopped
  • 1 tbsp brown sugar
  • 1 tbsp yuzu honey
  • 1 tbsp sesame oil
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 2–3 tbsp water
  • 1 tbsp gochujang

Skewer Assembly

  • Cherry tomatoes
  • Green peppers, cut into bite-size pieces
  • Wood skewers (soaked 30 min)

Steps

  1. Whisk marinade – In a large bowl, combine garlic, parsley, brown sugar, yuzu honey, sesame oil, olive oil, oregano, thyme, salt, pepper, water, and gochujang until smooth.
  2. Marinate chicken – Add diced chicken, toss to coat, cover with plastic wrap, and chill 30 minutes (or overnight for more flavor).
  3. Preheat grill – Heat grill to medium-high (375–450°F / 190–230°C).
  4. Assemble skewers – Thread chicken cubes onto soaked skewers, alternating with cherry tomatoes and green peppers (≈3 cubes chicken + 1–2 veggies each).
  5. Grill skewers – Place on hot grill and cook 10–12 minutes total, turning halfway. Chicken is done at 165°F (74°C).
  6. Rest & serve – Let skewers rest 2 minutes, then serve hot.

  • Lay skewers in a neat row on a flat serving platter.
  • Sprinkle with fresh parsley for color.
  • Serve with lemon wedges for brightness.
