Ingredients

  • Chicken wings (thawed)
  • Olive oil (for coating)
  • Aluminum foil or disposable tray
  • Medium bowl (for wing sauce)
  • 1 egg yolk (separated)
  • 1–2 tbsp butter
  • Buffalo Wild Wings Sauce (to taste)
  • Cooling rack or cork boards (for resting)

Steps

  1. Preheat oven – Set to 200°C (390°F), convection.
  2. Prepare wings – Thaw wings and pat dry. Line tray with foil. Brush wings with olive oil.
  3. Mix sauce – Separate egg yolk, scramble, and set aside. Melt butter, add Buffalo sauce, simmer. Pour half into yolk bowl and stir.
  4. Bake wings – Place wings on tray, bake 40 min, flipping after 20 min.
  5. Coat wings – Remove wings, dip both sides in yolk-sauce mix.
  6. Final broil – Broil wings at 220°C (425°F) for 3 minutes.
  7. Serve – Plate wings, brush with remaining sauce, enjoy!
