Ingredients

  • 500g salmon (2 x 250g slices)
  • 2 tbsp melted butter
  • ½ tbsp lemon juice
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • Kosher salt (for seasoning)
  • Ground black pepper (for seasoning)
  • 1 tsp chopped parsley
  • Lemon slices (for garnish)
  • Aluminum baking tray
  • Cooking rack or cork boards
  • Digital food thermometer

Steps

  1. Preheat oven – Set to 190°C.
  2. Mix glaze – Combine melted butter, lemon juice, and olive oil.
  3. Prepare tray – Place salmon slices in baking tray.
  4. Season – Brush glaze over salmon. Season with salt & pepper.
  5. Bake – Cook salmon 12 minutes at 190°C.
  6. Broil – Switch oven to top broil (250°C) and broil salmon 7 minutes.
  7. Check temp – Use thermometer to confirm internal temp ~145°F (63°C).
  8. Rest – Let salmon sit 2 minutes on rack before serving.
  9. Serve – Plate with lemon slices and enjoy!

Plating

  • Serve with roasted asparagus, garlic mashed potatoes, or steamed rice.
  • Drizzle extra lemon juice or add herbed butter on top.
