What It’s Like When You Walk In

We remember being at the door at 5:58 PM—two minutes before opening.

We didn’t really know what to expect.

There’s a long bar, modern decor with wooden slats, and lighting that’s dim but focused. You can already tell how it works—you’ll be seated at the bar, with space for about 12 people, plus a few side tables for two.

What Makes It Different

It has this North American ambiance to it.

It’s not your typical Asian restaurant decor. Nori feels like a hand roll sushi bar you’d walk into in New York City, Toronto, Vancouver, or even Miami.

You can order everything upfront—but the chefs won’t send it all out at once.

They make each hand roll one at a time, quietly keeping pace with you so everything stays fresh.

It’s a faster rhythm than most places in Stuttgart—but once you get it, it works.

Our Favourite Dishes

The menu is simple—and that’s kind of the point.

They focus on hand rolls, so everything comes down to the ingredients and timing.

Salmon Avocado

Clean, buttery salmon with ripe avocado. Simple, but it works every time. The rice is warm, lightly seasoned, and not packed too tight.

Salmon Aburi

Slightly torched on top, which adds a bit of smokiness without cooking the fish through. You get that quick hit of heat, then the cooler center.

Ebi (Shrimp)

Firmer texture, slightly sweet. A good reset between the richer salmon rolls.

Customer Service

Service here is efficient and to the point.

Now that we’re regulars at Nori, the staff has been very friendly, recognizes us, and we even got a chance to chat with the owner after dinner.

They’re a great staff and the owner has plenty in store for the future of Nori.
