Ingredients

  • 5 poached eggs
  • 1.5 cups plain Greek yogurt
  • Diced garlic (to taste)
  • ½ tbsp chives, finely chopped
  • Pinch of mint (optional)
  • ¼ cup parsley, finely chopped
  • ¼ cup dill, finely chopped
  • ½ tsp black pepper
  • ½ tsp fine sea salt
  • 1 tsp honey (or 1 tsp yuzu honey for twist)
  • 4 tbsp butter
  • 1 tbsp sesame seeds
  • 1 tsp paprika
  • 1 tsp sweet pepper flakes
  • Pinch red pepper flakes

Steps

  1. Mix yogurt – Chop garlic, parsley, dill, chives. Stir into yogurt. Add honey, salt & pepper. Spread on plate.
  2. Poach eggs – Poach 5 eggs in ramekin on high induction heat for ~5 min.
  3. Make butter sauce – Roast sesame seeds in saucepan. Add butter, melt on medium heat. Stir in paprika, sweet & red pepper flakes. Cook until foaming, then turn off heat.
  4. Plate – Place eggs on yogurt. Pour butter sauce over. Garnish with parsley & salt flakes. Serve with toast.

  • Use yuzu honey for a citrusy twist.
  • Adjust pepper flakes to your spice preference.
