Ingredients

  • 500g salmon, cut into large cubes
  • 1 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tsp yuzu honey
  • 1 tsp sugar
  • 2 tbsp gochujang
  • Β½ tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • ΒΌ tsp ground ginger
  • Olive oil (for cooking)
  • Sesame seeds (for garnish)
  • Chopped scallions (for serving)

Steps

  1. Mix sauce – Combine miso, soy, yuzu honey, sugar, gochujang, sesame oil, rice vinegar, garlic, and ginger.
  2. Prep salmon – Cut salmon into large cubes.
  3. Heat pan – Preheat to medium-high, add olive oil until sizzling.
  4. Sear salmon – Place cubes clockwise, sear 2 minutes.
  5. Flip – Carefully turn each cube with tongs.
  6. Add sauce – Pour sauce over salmon, sear bottom side 1 minute.
  7. Toss & stir – Toss to coat evenly, stir occasionally.
  8. Check temp – Cook until internal temp hits 145Β°F (63Β°C).
  9. Rest – Let sit 2 minutes before serving.
  10. Enjoy!

Plating

  • Spoon rice or grains onto the plate.
  • Place salmon cubes on top.
  • Sprinkle with sesame seeds and scallions.
  • Drizzle extra sauce if desired.
